Does the coffee bean or taste matter when used for a latte?

I usually find normal coffee or espresso shots too strong, therefor I'm a heavy latte drinker. So I was wondering, should I opt for normal Lavazza Espresso roast found over the shelf, or should I actually purchase sumatra/java etc. types of beans?

Source for good ground coffee?

I am planning food and Coffee for a 25 day trip down the Grand Canyon for 16 people. We want good coffee but we are not snobs. We used to get good ground coffee at Costco, not the canned stuff. They no long sell it. Local shops want 15 dollars a pound. We need about 20 pounds. I like the Costco Colombian beans in the 3 pound bag, good taste at a good price but for a trip like this, we need 20, 1 pound bags ground.

Know of any good stuff for this type of trip.
